Le Chevrot


Le Chevrot is a delicious goat cheese made in the Loire Valley. This chèvre is made by an old cooperative in the village of Celles-sur-Belle near Poitou. It can be either pasteurized or unpasteurized. Le Chevrot sports a bloomy wrinkled rind. The interior is dense and smooth. I would not exactly call this cheese goaty. It lacks that tangy goat cheese flavor. This one is fairly young and has notes of herbs, hay, butter, nuts and white button mushrooms. Classically, this would pair well with a Loire Sauvignon Blanc. Some other great options would be a Colombard/Ugni Blanc blend from Gascony or a dry Bordeaux Blanc. Champagne and rose are also great options.
