Pistou

The summer bounty of excess basil calls for Pistou. Might as well make a basil flower arrangement too as it keeps the kitchen smelling fresh. Pistou means pounded in the Provençal dialect. Take garlic, basil and olive oil and pound them together with a mortar and pestle until it becomes a smooth sauce. It is a rewarding feeling when you do it but most of the time I reach for my food processor 😬. If you’re feeling extra non-traditional, throw some Parmesan and almonds in there à l'italienne.
